CHEF

Outland Camps is searching for dynamic and confidant team players with a passion for food that are looking to be challenged in a fast paced environment.  Positions are available immediately.

This is not your average Camp Cooking!

We are quickly establishing ourselves as the premier remote catering company in Canada.  We are looking for competent experienced a la carte chefs to produce an amazing dining experience for crews of 150 to 500 people.  We offer a concept that allows you to cook from scratch utilizing the freshest products available while being able to manage a kitchen and keep food and labor budgets in line. 

Key Responsibilities:

Overseeing of all kitchen operations including but not limited to:

  • Menu planning.
  • Inventory management and ordering.
  • Providing supervision, guidance and support to all Outland kitchen staff. This will include: scheduling shifts, training and development through coaching and mentoring, delegation of assigned job tasks and employee evaluation and performance management.
  • Working with the Camp Manager, Regional Manager and Regional Chef to achieve personal and company goals.
  • Maintaining ongoing communication and a working rapport with Outland's customers or clients. Ensuring that the client is satisfied with the overall service, cleanliness, and maintenance of kitchen and dining facilities.

Requirements:

  • Minimum 5 years experience in a Chef or Sous Chef role with experience in inventory management and food cost control from working with sales forecasts.
  • Journeyman Red Seal.
  • Positive attitude, clean and safe work habits, mentally and physically organized and be able to not only follow standards but have the initiative to constantly set new ones.

Work Schedule and Remuneration:

Kitchen Managers work on a schedule of 3 weeks on (21 days) and one week off (7 days).  Day rates are paid based on camp size and a 12 hour shift inclusive of a 2 hour break.

first Cook

Location Varies

The First Cook is responsible for the proper and timely preparation of meals including, but not limited to, food service, food safety and supervision of kitchen staff.

Key Responsibilities:

  • Prepare high quality, nutritious meals (breakfast, lunch, dinner and snacks) according to client scheduling and within the menu plan and budget guidelines.
  • Manage Kitchen Staff in food preparation.
  • Prepare and send food orders.
  • Manage inventory.

Qualifications:

  • Large scale camp cooking experince.
  • Red Seal or other Certfications an Asset.
  • Food Safe
  • WHMIS

Work Schedule and Remuneration:

First Cooks work on a schedule of 3 weeks on (21 days) and one week off (7 days). Wages are paid based on a Day Rate and a 12 hour shift inclusive of a 2 hour break.

Baker

Location Varies

The baker will be in control of a full bake including breads, rolls, pastries and some dietary needs of clients.  This position may require that the baker assist in the kitchen with breakfast production, depending on the size of the camp.  The baker will be required to create their own orders and will communicate with kitchen and camp managers in this regard.  This position will require the skills needed to supervise others in bakery production and procedures.

Second Cook

Location Varies

The Second Cook acts in a non-supervisory role and is responsible for overall menu preparation and maintenance conducted daily at Outland facilities under the direction of the First Cook.

Key Responsibilities:

  • Assist the Head Cook in the preparation of all menu items as needed.
  • Assist in the cleanliness and maintenance of he Kitchen and serving areas.

  • Large scale camp cooking experince an Asset
  • Food Safe
  • WHMIS

KiTCHEN SUPPORT AND housekeeping

The Housekeeping Support Staff act in non-supervisory roles and are responsible for maintaining a clean, orderly and safe work environment.

Qualifications:

  • WHMIS
  • Food Safe an Asset
  • Experience in a Remote Camp an Asset
